Removal of the cat converter and silencer will definitely make the exhaust gases flow better but performance gain will be minimal on a stock engine.

You might want to consider changing the entire system from the headers to the muffler ? Tuned length 4-2-1 style headers generally give better low end and mid range performance. 4-1 style headers give you a narrower power band and better top end performance.

Proper pipe diameter will have to be taken into serious consideration as well. Your fuel efficiency is likely to be affected. You'd definitely need an exhaust shop with good knowledge and experience.
