engine temperature unstable

hi guys, recently my dashboard engine temp needle starts to "dance" from 80degree to 60 then to 40 and back to 80. its like it have a mind of its own ! today slightly worse, the temp starts to "dance" then the car jerks a bit ... anyone had encounter or know the cause of a flickering engine temperature? just curious and wanna know more before sending to a workshop .

80 deg is normal? mine stays at 90deg consistently so is my car sick too?

talking about temp, I keep receiving these alerts to top up my coolant.... kinda irritating as I need to top up every few months. I don't see any leakage anywhere too. like that must see doctor or not?
